Zucchini-Walnut-Carob Cookies

Who doesn’t love cookies! Growing up I was blessed with women in my family who loved to bake. One of my favorite treats, besides the ever popular banana bread was zucchini walnut cookies. Honestly, as soon as the batch of cookies came out of the oven I would stand in the kitchen waiting for the moment they cooled down. I have been buying more zucchini lately and incorporating it into my diet. From eating it raw to adding it as a side dish, my love for zucchini is still strong after all these years.

I love featuring fruits and vegetables that pack a lot of punch when it comes to health benefits. Did you know that one cup of zucchini has about 36 calories and 10% of your dietary fiber. Which as I have mentioned in previous posts~ helps with digestion, prevents constipation, maintains low blood sugar, lowers cholesterol, promotes prostate health and is great for weight management. Not only is zucchini high in fiber, it is rich in vitamin A, vitamin C and potassium. Making these vitamins and minerals important for boosting your immune system. Zucchini also contains manganese which  is essential for the production of proline, an amino acid that allows collagen to form, thus promoting  healthy skin.

Here is my altered healthy recipe for Zucchini Carob Walnut Cookies:
Ingredients:
~1 cup of Coconut Flour (you can use whole wheat, buckwheat, etc. This is what I prefer)
~1/2 cup of favorite protein powder.
~1/2 tsp baking soda
~1/2 tsp Himalayan Salt
~2 Tbsp Coconut sugar
~1 tsp Cinnamon
~1/2 tsp cloves
~1 tsp Vanilla
~1/2 cup of carob powder
~1/2 cup of Coconut oil (liquified)
~1/3 cup of Coconut maple syrup (or Agave Syrup)
~1 egg (organic/free range)
~1/2 cup of Organic Unsweetened Apple Sauce
~1 cup of shredded zucchini ( you can add more or less, depending on personal preference)
~1/2 cup of crushed walnut halves
~1/2 cup of crushed Almonds
~1/2 cup shredded coconut
Baking Instructions~
Pre heat oven to 350 degrees F
In a bowl combine coconut oil, vanilla, coconut maple syrup, coconut sugar and apple sauce. Then add the egg and mix in. Now add the shredded zucchini.
Then in a separate bowl combine the coconut flour, protein powder, salt, baking soda, cinnamon, cloves and carob powder. Slowly add a little of the dry mixture to the previous wet mixture. Mix well and keep adding additional small amount till all is combined. At the end, add the nuts and shredded coconut.
Finally scoop tablespoon size amounts of cookie mixture onto a parchment lined or greased cookie sheet. (I use a small amount of coconut oil to grease my cookie sheets). Bake each batch for 15 mins, or untill they have a semi firm texture. You do not want to over cook these. Take out and let cool off and enjoy. I like to make large batches of cookies and give out to friends and family or freeze extras for future treats. These cookies are a great source of fiber, protein and a healthy alternative when your craving something sweet.

A Fresh Face with Jeremy Szafron

There is something that I just love about writing Beauty Q&A interviews! I love finding interesting people who are genuine, have great values, live life, give back, keep it real and remember just where they came from. Someone that exudes and celebrates beauty inside and out.

Now saying all this, I’d like to introduce you to tv personality Jeremy Szafron. I have known Jeremy for some time now and still remember the first time I met him at fashion week, being drawn to his magnetic energy, stylish fashion and incredible smile. There is something about how he puts himself together. Whether it’s dialed in with a suit or rocking a more casual style, those black framed glasses give Clark Kent a run for his money. Jeremy was even dubbed as “Montreal’s freshest face in television.”

As a Producer, Television Host for the Entertainment show FMA Weekly and national commentator with CTV News, Jeremy has interviewed many celebrities on an off the red carpet. He has a passion for life, is a proud uncle and volunteering is dear to his heart. I love how Jeremy speaks his mind and is so candid. He really has an incredible heart and cherishes his time with family and friends. I was so excited to talk with Jeremy and find out more on his style, life and how he keeps a fresh face on and off camera.

BB411~When did you know you wanted to go into TV?

JS~It’s somewhat of a cliché, actually. I have wanted to get into television since I was a young boy. I once saw a reporter come to a very rural town in Saskatchewan to cover the aftermath of a tornado. I observed the entire process and was hooked.

BB411~What was your earliest memory?

JS~My first television had a fancy new “Closed Captioning” option, and I used to watch the television on mute pretending the captions was a teleprompter. My mother would come into my room, confused as to what I was doing. I then did some research and found one High School in all of Alberta who offered Broadcasting as an option. Not only did I attend that high school, but the school had a radio station which I managed and hosted for two years.

BB411~If you weren’t a host/producer and you could be anything in the world what would it be?

JS~I actually have no idea. I wake up everyday and love to go to work, it’s not work. I feel blessed everyday that I am doing something I love and I can only build and continue with it.

BB411~Have you always been into fashion and beauty (you always look so stylish)?

JS~Firstly, too kind. I embrace taking care of myself, adding that touch of different into a daily outfit. Don’t get me wrong, I can go cut some wood for the cabin fire while wearing some sort of rubber boots. For the most part we live in one big sea, and I think you have to put some effort in to being different. I enjoy seeing what is cutting edge season to season, but also staying true my own comfort within a unique way.

BB411~Favorite Designer?

JS~Tom Ford. The man is a genius when it comes to menswear and I love his passion of basics. On Air I typically wear a suit, and I prefer Indochino for those. They are custom-made, affordable, and they look damn good!

BB411~What was your earliest memory?

JS~I have enjoyed picking up GQ magazine for fifteen years. When people were reading the popular-at-the-time book, I had that magazine in my hands.

BB411~#1 beauty product you could not live without?

JS~I’ll be honest, Valmont eye cream. It’s not feminine, it helps with anything from a long night out to a brighter looking face.

BB411~Favorite Cleanser and Sunscreen?

JS~Kiehl’s makes a plethora of great product, I use a ton of them. A little SPF goes a long way, one that can avoid you from looking like Edward Scissor Hands in the future.

BB411~Favorite Moisturizer?

JS~ Anthony Oil Free Face. I actually have pretty oily skin, so I like oil-free, more matte.

BB411~Do you exfoliate?

JS~I use a Gomage brush every day in the shower that I got from a Hammam in Marrakech. Makes you just feel clean and fresh.

BB411~Favorite cologne?

JS~Peppermint by Comme Des Garçons.

BB411~What do you do to stay fit?

JS~I would love to say I work out, but sadly often don’t. I’m hoping my family blessed metabolism keeps going forever, cause~I love my beer!

BB411~What does beauty mean to you?

JS~Most men don’t think it’s masculine enough to use “products” or take care of themselves, but then they complain when they look old? Man up, and take care of yourself~your spouse will surely appreciate it. I’m in a bit of a minority because I often have to wear makeup on television so I just make sure some removal wipes are around when I’m off the clock!

BB411~Do you have a best kept beauty secret that has been passed down to you (say from your Mother or Grandmother)?

JS~Arnica Gel! If you have a bruise, you’re sore or anything else. It’s like the Franks Red Hot commercial, “I put that sh-t on everything!”

BB411~ I totally agree, I have been using it forever.

BB411~What charities are you involved in and are any dear to your heart?

JS~I had the privilege of being asked to join the Odd Squad Gala Committee this year, and what a success it was. I think children in their youth have enough pressure around them, sometimes they need some direction. Be smart, make the right decisions and DON’T fall to peer pressure.

BB411~What does it mean to give back?

JS~This is something I take very seriously. Being on television gives you an outlet to have an audience, a big one! I think it’s our duty to give back, and use that outlet to showcase support.

BB411~If you could tell your younger self something you know now what would it be? (a lesson learned or wisdom gained?)

JS~Listen to every piece of advice you’re given. Make mistakes, and learn. Don’t ever be afraid of that.

BB411~What inspires you?

JS~ I am inspired everyday to make a difference. It could be smiling at someone who is having a bad day to helping someone by opening the door. Small things make a difference and I believe strongly in Karma. With that being said, I also don’t believe in expectations by getting things back.

BB411~Fun fact that your fans may not know about you

JS~I love my friends and my family. I am blessed enough to have the most amazing nieces and nephews and a strong support system of family and friends. I am very loyal, and I pretty much love everyone or something about everyone. Oh, and I have a phobia about Cotton balls (not kidding).

BB411~ Favorite Quote?

JS~ There is no reason to have a plan b, because it distracts you from plan a.
